The heat exchanger where refrigerant boils and absorbs heat from the space or product being cooled.
In the evaporator, low-pressure refrigerant boils at its saturation temperature and picks up heat from air or liquid passing over the coil. It should leave as vapour with a little superheat. Low airflow across the coil lowers suction pressure and superheat and can freeze the coil; a starved evaporator shows high superheat.
