Heat that changes a substance's state (boiling or condensing) without changing its temperature.
Latent heat moves when refrigerant boils in the evaporator and condenses in the condenser; the temperature stays at saturation while it happens. Sensible heat changes temperature without changing state, as in superheating vapour or subcooling liquid. Most of a system's capacity comes from latent heat, which is why keeping the evaporator properly fed matters so much.
